I don't know about you, but the words...What's for Dinner? bring anxiety to my heart? After working all day, picking up kids after school, running them to activities, homework, etc. the last thing I am thinking about is cooking. But we all have to eat. Try these easy keto dinner recipes and simplify your meal planning.
Plan Keto Dinners
Dinner is a meal that means so much but honestly, takes some planning to be successful. You need to secure your recipes, purchase your groceries, have time available to cook, and people at home and ready to eat.
Getting all of these variables to align is a challenge on a weekend, and is often a scheduling nightmare during the week.
Then add in the keto diet.
The keto diet limits daily carbohydrates so cuts out a lot of meals that are shortcuts. Shortcuts that we may all use to get dinner done and out of the way. Things like frozen pizza, lasagna, Chinese takeout, fast food burgers, and on and on.
We know these shortcuts are not healthy, but with the pace and business of life, we often resort to throwing a few or more into our weekly dinner schedules.
But of course, if you have started or are considering starting the keto diet, you know none of these are allowed and are probably thinking how am I going to pull this off?

One of my favorite recipes is Lemon Butter Chicken by Damn Delicious. A chicken dish with unbelievable flavor is how I would describe this recipe. It calls for chicken thighs but my hubby is not a fan of thighs so I used chicken breasts and it was delicious. I love the spinach and the lemon cream sauce is divine.
When the weather cools, my taste buds start to crave chili.
I love Hey Keto Mama's Keto White Chicken Chili. This recipe is simple and super flavorful. Made per the recipe, it has a mild spice, but you can easily up the heat by adding additional spices. When I made this last night, I didn't have the green pepper and didn't miss it. I also added an extra 1/4 teaspoon of chili powder to up the flavor.
One tip though is that added spices can impact the carbs per serving. So don't forget to adjust the recipe carbs when you make additions or substitutions.
Next time I plan on making cheddar biscuits with the White Chilli. My go-to recipe for biscuits is Cooking Keto With Kristie's Low Carb Good Morning Biscuits. Her recipe produces a tender, flour-like biscuit when you use the oat fiber in place of the coconut flour. Oat fiber lowers the carbohydrate count of the biscuits because it is essentially all fiber and does not impact your blood glucose.

Turkey Recipes
Turkey is a flavorful meat and does not contain a lot of carbohydrates. I like to roast a bone-in turkey breast. Easy and with less mess and fuss that the holiday bird, it will provide you with a flavorful meal and leftovers to help plan other meals for the rest of your week.
Juicy Baked Turkey Breast
Another great dinner is cooking a turkey breast in the slow cooker. I have tried a couple of recipes online and really the turkey breast usually turns out tender and juicy. One recipe I liked was Juicy Slow Cooker Turkey Breast by Recipe Tin Eats.
Turkey Meatball and Kale Soup
Peppered Turkey Meatloaf
This Peppered Turkey Meatloaf is moist and tender and full of flavor. When following keto you will want to substitute a sugar substitute in the red sauce to keep your carbohydrates low.
Beef Recipes
Planning your keto dinner recipes wouldn't be complete without including a few beef recipes.
Another yummy recipe is Hey Keto Mama's Easy Keto Lasagna. This recipe substitutes cauliflower mozzarella noodles for the typical eggplant or zucchini noodles that most recipes use to replace the pasta noodles.
While it takes a bit of work to make the noodles, using pre-riced cauliflower from the freezer section will cut your time and effort for this recipe. Well worth it for the flavor and texture.
For a quick weeknight meal, try Low Carb Taco Pie by All Day I Dream About Food. This crustless taco pie is a flavorful recipe that bakes up in one pan. Enjoyed by everyone in our family. It is my go-to when my planning wasn't as organized as it should have been for the week. Enjoyed with a green salad with cucumbers, a couple of tomatoes, and cheese with Avocado Ranch Dressing, it is a meal that you can enjoy.
But there is nothing like a grilled steak. We use my husbands secret steak marinade and it adds amazing flavor to the meat and also helps tendorize it.

Another beef recipe I make usually monthly is an eye of round roast that I cook at 500 degrees. This cut of meat is typically thought to be a tough, but cooking at high temperature produces a tender flavorful beef. I adapted my recipe from High-Temperature Eye of Round Roast by Lyn Barbour on allrecipes.com
Turn on and thoroughly heat your oven to 500 degrees. While the oven is heating, I start with 3-5 pound beef roast, season well on all sides with salt, pepper, and garlic powder.
We like our beef rare so will leave for 10-15 minutes per pound and remove from the oven. Check to see if the internal temperature is at least 145 degrees. You may like your beef less rare so adjust cooking times to your taste, but remember the beef will continue to cook once it is out of the oven. Slice thin.
Use the drippings to make a keto gravy and serve with Cheesy Mashed Cauliflower.
Fish Recipes
I always keep frozen fish fillets and shrimp in my freezer. Thaw and then place in a foil-lined pyrex dish. Drissel olive oil over the top fo fish. Season with salt, pepper, paprika, a little garlic, and parsley flakes. Close up the foil. Bake at 350 degrees for 20 minutes until the fish is opaque and easily flakes. Serve with Easy Creamed Spinach and a green salad and you are set.
