Shrimp Salad with Tahini Dressing is a quick and easy salad for a weeknight meal. Sweet and tender shrimp dressed with a Caesar-style dressing on a bed of mixed greens. Add in crunchy wonton strips, tart dried cherries, and shredded Parmesan cheese and you have a delicious salad.
Ingredients
- shrimp
- garlic
- EVOO, butter (optional)
- mixed greens
- salad wontons

- shredded Parmesan cheese
- Tahini dressing
Instructions
Step 1. Heat olive oil in a frying pan over medium heat.
Step 2. Add minced garlic and stir. Add fresh or thawed shrimp to the hot pan. Cook for 2-3 minutes and turn. Continue to cook for 1-2 minutes until it turns pink and curls. Don't overcook. Remove from the hot pan.
Step 3. Place salad greens, wontons, dried cherries, and shredded Parmesan cheese in a large bowl and gently toss. Drizzle with Tahini dressing and toss. Add to plate and top with cooked shrimp.

When using frozen shrimp, it should be kept frozen until ready to use.
First thaw shrimp in ice water. Add a cupful of ice cubes to a large bowl. Add the shrimp and fill the bowl with water to cover the shrimp. Let it sit for 10 -15 until shrimp is fork-tender.
Next place the shrimp on paper towels and pat dry. It is ready to use in your recipe.
Substitutions
Shrimp: Fresh or frozen shrimp work in this recipe. I prefer to use peeled and deveined varieties for easier preparation, but substitute what you have on hand.
Garlic: I keep a jar of minced garlic in the refrigerator but thinly sliced fresh garlic is a good substitute.
Greens: Use a spring mix for a colorful salad. Can be substituted with romaine, or even arugula. Tip: You can also use a premixed bag of salad.
Salad Wontons: Salad wontons were added for crunch but you can add pumpkin seeds or nuts.
Dried Cherries: Substitute with dried cranberries, apricots, or other dried fruit.
Tahini Dressing: The recipe dressing can be substituted with a commercial Caesar.
What to Serve with Shrimp Salad
Serve this salad with a slice of French bread and a drink for a light lunch or dinner. Can also be a side salad for dinner.
