Juicy grilled chicken breasts seasoned with a barbeque rub and wrapped in bacon are an easy weeknight dinner. Ready in less than 30 minutes.
Ingredients for Grilled Chicken Breast
This quick and simple recipe requires only a few ingredients and spices right from your pantry.
Chicken breasts cut in half to help the chicken cook evenly and faster.
Bacon strips wrapped around chicken and secured with tooth picks.
Barbeque rub consisting of brown sugar, chili powder, onion powder, garlic powder, smoked paprika, cayenne pepper, and salt.
How to Prepare Chicken Breasts
The first step is to combine spices and brown sugar into a rub.
Cut chicken into equal portions. Sprinkle rub over chicken and rub into chicken.
Secure one end of bacon to chicken with a toothpick. Wrap around the chicken and secure the other end with a toothpick.
Cook on grill over high heat. Sear on all sides and then move away from flame and continue to cook until the internal temperature of chicken measures approximately 165 degrees F with a meat temperature probe. (#aff)
Alternate Baking Instructions
When you don't have a grill or the will to grill the chicken breasts can be prepared in the oven. Preheat your oven to 375 degrees F.
Place Bacon Wrapped chicken Breasts on a sheet pan lined with parchment paper. Bake for 20-25 minutes or until internal temperature is 160-165 degrees F. Using a meat temperature probe is one of the most important tips I can offer.
Using it to evaluate the internal temperature of chicken makes the difference between dry tough chicken and tender juicy chicken. I use a meat temperature probe like this one. Worth every penny.
Switch the oven to broil and cook for 3-5 minutes to crisp the bacon.
