Flavorful Sweet Potato Saute with Apple and Onion is a great recipe to use up pantry staples. Quick and easy. Perfect side dish for chicken, pork tenderloin, or pork steaks on the grill.
Ingredients
This recipe uses just a few simple ingredients including:
- sweet potatoes
- apples
- onion
- EVOO
- orange juice
- lemon juice
- brown sugar
- cardamom
- cayenne pepper, salt
Preparation
Microwave the sweet potatoes for 3 minutes. This softens the skin and makes the sweet potato easier to peel. Alternatively, you can chop the sweet potato into large pieces and boil it for 20 minutes.
Once the sweet potato is fork-tender, peel, and slice. Set aside.
Next, slice the apple and onion.
To keep the apple from turning brown after it peeled, squeeze a little lemon juice on the slices.
Heat olive oil in a frying pan over medium-low heat.
Add onion and stir and cook for 2 minutes. Next, add sweet potatoes to onions and stir and cook for 5 minutes.
Stir in apples and cook for 2-3 minutes.
Last add water, orange juice, brown sugar, and spices. Cover and lower heat to low for 10 minutes until sweet potatoes and apples are fork-tender.
