What is Barley
When you hear the word barley, you may think of beer because it is used the fermentation process for beer and distilled beverages.
Barley is a type of grass and considered a cereal grain grown throughout the world.1 A great ingredient to add to soups and stews. It has a bite similar to rice and works great in Summer salads.
The most common form of barley available is a pearled barley. Pearled barley is prepared for consumption by rolling to remove the indigestible outer hull. While this removes the hull it also removes the bran and germ. Therefore, pearled barley is not considered a whole grain.
Full of soluble fiber and protein, pearled barley is still a nutritious addition to your recipes.2
Mediterranean Salad Ingredients
This salad is full of spices and flavors a variety of vegetables. I used crisp cucumber and tomato. but you could also include greed pepper, carrots, celery, or other vegetables. Feta cheese adds a salty chew.
Perfect for a side salad, it works well as a cold salad with fish, or chicken. with a green salad.
