Instructions
Step 1. Place roast in the bottom of the slow cooker. Combine garlic powder, salt, and pepper. Sprinkle over roast.
Step 2. Spread chopped peppers and onion on top of and around the roast in a 6-quart slow cooker. Pour broth around roast in the bottom of the cooker. Cover with lid.
Step 3. Set the cooker to low and cook for 4 hours.
Step 4. Check meat to see if tender. Add quartered potatoes, carrots, and chopped celery on top of and to the side of the roast. Cover and continue to cook for 1 hour.
Step 5. Roast is done when vegetables and roast are fork-tender.
