Pick a Cut of Beef for Slow Cooker Pot Roast
When you are cooking at home, make sure and remember to use your slow cooker. Plan your meal ahead of time and dinner will be ready without a lot of fuss.
This recipe is for a large chuck roast. The chuck roast cut of beef is ideal for a slow cooker because it has marbling throughout the cut of meat. This will help ensure a tender bite when the roast is finished.
We feed five in our family, with 3 growing teens. I look for a larger roast than we need. A 3 pound roast with marbling cooks down quite a bit. If I can find a 4-pound roast I can make a meal of sandwiches with barbeque sauce the next day. If we don't have sandwiches, then I freeze for a beef stew later in the month.
Ingredients
You need a pot roast, preferably a chuck roast for this recipe. A 3-pound roast feeds about 5 in my family.
Instructions
Step 1. Gather ingredients and chop onion into large quarters and bell pepper into large strips.
Step 2. Place roast in bottom of slow cooker. Combine garlic powder, salt, and pepper. Sprinkle over roast. Spread pepper and onion on top of and around roast. Pour broth around roast in bottom of cooker. Cover with lid.
Step 3. Set cooker to low and to cook for 4 hours.
Step 4. Check meat to see if tender. Add quartered potatoes, carrots and chopped celery on top of and to the side of roast. Cover and continue to cook for 1 hour.
Step 5. Roast is done when vegetables and roast are fork-tender.
Slow Cooker
For this recipe I use a 6-quart slow cooker. If yours is smaller, then you may need to cut back on the roast, carrots, and potatoes. I love to use my handy slow cooker whenever I get a chance. Mine has temperature settings and a timer.
I add the roast and seasonings first and cook for 3-4 hours. Add the potatoes, carrots, celery, and the other vegetables a couple of hours before the roast are done.
All slow cookers cook a little differently. My directions for this slow cooker pot roast are based on how mine cooks, so please adjust cooking time to how your's cooks.

What to Serve With Pot Roast
