Shrimp Cauliflower Fried Rice is a lower carbohydrate dish that has all the texture and flavor of your favorite restaurant's dish. Simple preparation of cauliflower with the right seasonings and flavorings does all the work with only 6 net carbohydrates per serving.
Low in carbohydrates and extremely versatile, side dishes that substitute cauliflower for high-carb rice and potatoes will make your taste buds sing!
Cauliflower can be roasted in whole pieces, or chopped into small pieces the size of grains of rice. Once the cauliflower is riced, it can be boiled, sauteed, or roasted into delicious side dishes.
Ingredients
- cauliflower chopped,one head of cauliflower
- shrimp, raw, thawed
- egg scrammbled
- bean sprouts
- scallions or green onions
- garlic minced
- carrot grated
- broccoli chopped
- sesame oil
- soy sauce, fish sauce, rice vinegar
- ginger ground, coriander
- pepper, salt to taste, cayenne pepper
Instructions
Preparing Cauliflower Rice
Step 1. Pick a large head of cauliflower. Remove the outside leaves and rinse with water.
Step 2. Cut the head of cauliflower in half. Then cut each half into quarters. Remove the woody internal stem so you are left with the cauliflower florets.
Step 3. Chop into 1-2 inch pieces.
Step 4. Continue to chop or grate the cauliflower into rice-sized pieces or you can process in a food processor. When adding to a food processor, only add 1/3 of the cauliflower at a time. This will help keep the final rice a more consistent size. Pulse cauliflower several times until it is approximately the size of rice.
Step 5. The key to a rice-like texture is removing moisture from the cauliflower. When sauteing, heat your pan with oil and butter added until hot. Add your cauliflower rice and allow to saute. Do NOT cover. Saute for 3-5 minutes before stirring. Less stirring equals firmer rice. As your cauliflower begins to brown add salt and pepper. Remove cauliflower rice from the pan and set aside.
Step 6. Add sesame oil to the frying pan. Whisk and egg until blended. Add egg to the hot pan. Stir egg with a flat spatula until cooked. Remove egg from the pan and set aside.
Step 7. Add remaining sesame oil to the frying pan along with carrots, broccoli, and shrimp. Adjust heat to medium-low and stir and cook for 5 minutes until shrimp is pink.
Step 8. Add cauliflower rice, bean sprouts, green onion, minced garlic, and egg to shrimp mixture. Drizzle with soy sauce, fish sauce, and rice vinegar. Stir lightly. Sprinkle in ginger, coriander, and cayenne pepper. Heat over medium-low heat for 2-3 minutes. Serve immediately.
