This turkey tortilla soup recipe is quick and easy and includes ingredients right from your pantry. It fills your home with a wonderful aroma that will have your family hovering in the kitchen waiting for a filling dinner.

- chipotle pepper plus 1-2 tablespoons adobo sauce
- cumin
- ginger
- dried cilantro
- lime juice
Tortilla Strips
- corn tortillas
- olive oil extra virgin

Instructions
Step 1. Heat olive oil in a large stock pot over medium heat. Add onion. Stir and cook for 2-3 minutes.
Add minced garlic. Stir and cook for 2-3 minutes.
Step 2. Add broth, tomato, rinsed and drained corn, black beans, and chopped and shredded cooked turkey Stir in chopped chipotle pepper, adobo sauce, cumin, cilantro, ginger, and lime juice.
I use frozen servings of broth for this recipe. Homemade Bone Broth is so easy to make. I split them into 1-cup portions and freeze them to use in my recipes.
Step 3. Lower heat to low and simmer for 15 minutes.
Step 4. Heat 2 tablespoons of olive oil in a frying pan over medium heat. Cut corn tortillas into strips and add a single layer to the pan. Let cook undisturbed for 2-3 minutes until they start to brown. Turn and cook for 2-3 minutes.
Remove from pan and drain on paper towels. Sprinkle with a pinch of finishing sea salt. I use this one #ad.
Step 5. Ladle soup into a bowl. Garnish with a tablespoon of Greek yogurt, chopped avocado, shredded cheese, and homemade tortilla chips. Sprinkle with chopped fresh cilantro.
