Enjoy this Simple Eggplant Pasta of olive oil sauteed eggplant, black olives, garlic, broth, feta cheese, and spices. Sprinkle with Parmesan cheese and you have a light and delicious lunch or dinner.
How to Make Eggplant Pasta
First start water for your pasta. Bring a large stockpot of water to boil. Add your pasta and cook for 8-10 minutes until it is al dente. Drain pasta and add to cold water and drain again. This will prevent the pasta from sticking. Return pasta to stockpot.
While the pasta is cooking, chop your eggplant into 1-2 inch strips. You can peel the eggplant prior to chopping or chop with skin. Sprinkle with salt. Microwave on high for 3 minutes. Stir and heat again for 3 minutes. When eggplant has cooled, press between paper towels to remove moisture.
As eggplant is in the microwave, heat olive oil in a pan over medium heat. Saute onion for 3 minutes. Then add garlic, eggplant, Italian spices, and red pepper. Cook 3-5 minutes until eggplant has browned and is soft. Add black olives and broth. Cook over medium heat for 3 minut
Add eggplant mixture to pasta and mix in feta cheese. Reheat pasta. Drisel with olive oil.
Serve with shaved parmesan cheese.
Substitutions and Additions
Sauce: This pasta dish includes simple ingredients and olive oil and broth-based sauce. If you prefer a wetter sauce, you can include a can of diced tomatoes when you add the broth.
Eggplant: mushrooms are a good substitution or even addition to this recipe. You could also include zucchini.
Black Olives: capers provide a salty bite and would be a good substitution to black olives.
Serve this Simple Eggplant Pasta with a salad of mixed greens dressed with extra virgin olive oil and balsamic vinegar and you have a delicious meal.
