I am always trying to come up with flavorful side dishes. This side reminds me of church pot lucks from my childhood with long tables filled with every side salad imaginable. This Savory Hot Potato Salad can be served warm, or chilled from the refrigerator.
There are hundreds, maybe thousands of varieties of potatoes.1 Not all are available at my local grocery store. What is readily available is what I typically choose when making my recipes.
For this potato salad, I used a variety of petite potatoes. I like the color variation. Fingerling or new potatoes work well in potato salads because they hold up to boiling and keep their texture and flavor.
This savory hot potato salad is a simple dish that will add a lot of flavor to your meals. Serve it with pork or Feta Stuffed Chicken Breast and a salad.
