This Corn, Black Bean, and Beef Chili Recipe is hearty and filling on a cold evening. It is full of spicy flavor but mild in heat. Made with simple ingredients right from your pantry, you will have dinner on the table in just about an hour.
I usually substitute ground turkey or chicken in recipes, but occasionally my family likes to have a beef chili recipe.
This one is filling and full of chili spice but has a milder heat than many chili recipes. More heat can always be added with a little hot sauce by those in your family who want a hotter chili.
Ingredients in Corn Black Bean and Beef Chili Recipe
This chili is made all in one pan. Start with browning ground beef. I look for lean packages of ground beef. Vegetables include chopped onion, bell pepper, and minced garlic.
Then it gets really easy. Just add cans of corn, black beans, and petite diced tomatoes. Make sure and include petite diced tomatoes and chilies for a little heat. Beef broth is added for additional liquid.
Spices include salt, chili powder, and cumin. To help bring out the flavors I added allspice and brown sugar.
How to Prepare Corn Black Bean and Beef Chili
This is a super simple recipe. The hardest part is chopping the onion and bell pepper. After that is it really a dump recipe, all made on one stock pot. Love it!
Start by browning your ground beef.
If you are using really lean beef, you may need to add a tablespoon of olive oil.
If you are cooking regular ground beef them you should have enough grease from the beef to sauté the onion, bell pepper, and minced garlic. Once the vegetables are tender, you can strain off any remaining oily drippings.
Next, add the canned tomatoes with the juice, rinsed black beans, and corn. Stir to mix all the ingredients. Add beef broth.
Finally add your spices, including salt, chili powder, cumin, and allspice. A bit of brown sugar helps bring out all the flavors.
Bring to a boil and then turn heat down to low and simmer for 30 minutes.
Serve with a dollop of Greek yogurt and a sprinkle of parsley. Done.
What to Serve with Chili
This chili is great with a leafy green salad and a side of corn bread.
