- 4 cups potato chopped into 1/4 inch cubes (5 medium potatoes)
- 1 cup carrots sliced into 1/4 inch slices
- 1 cup celery sliced
- 1/2 cup onion finely chop
- 3 tbsp olive oil
- 4 cups broth chicken or vegetable
- 1/2 cup Greek yogurt low fat
- 1/2 tsp pepper
Peel potatotes and chop into 1/4 inch cubes.
Peel and chop carrots into 1/4 inch slices.
Chop celery into 1/4 inch slices.
Finely chop onion.
Heat olive oil in large pan. Add sliced carrots to pan and saute for 3-5 minutes.
Add celery and cook for 3 minutes. Add onion and cook for 3 minutes.
Add chopped potato to pan and cook for 5 minutes.
Add broth to cover potatoes and vegetables. Heat to a boil.
Lower heat and cook at a simmer until potatoes and vegetables are tender.
Remove from heat.
Insert immersion blender under the surface of the soup and carefully gently pulse several times.
Add yogurt and stir into soup.
