Simple Sauteed Bell Peppers and Onion

Chopped peppers and sliced onion, sauteed in extra virgin olive and seasoned with fresh herbs.

  • 2 lg green peppers
  • 2 lg orange peppers
  • 2 lg yellow peppers
  • 1/4 cup onion
  • 2 tbsp olive oil extra virgin
  • 1 tsp thyme fresh
  • 1 tsp oregano fresh
  • 1/8 tsp salt
  • pepper pinch


  • Rinse peppers under water and use knife to remove stem and inner seeds and white material from inside of pepper. Slice into 1/2 strips. Slice onion into thin strips.
  • Heat olive oil in frying pan over medium heat. Add onion strips. Cook and stir for 2 minutes until onion starts to soften and brown. Add peppers and continue to cook and stir for 5 minutes.
  • Season with salt and pepper. Add chopped fresh thyme and oregano.
