Simple Sauteed Bell Peppers and Onion

- 2 lg green peppers
- 2 lg orange peppers
- 2 lg yellow peppers
- 1/4 cup onion
- 2 tbsp olive oil extra virgin
- 1 tsp thyme fresh
- 1 tsp oregano fresh
- 1/8 tsp salt
- pepper pinch
Rinse peppers under water and use knife to remove stem and inner seeds and white material from inside of pepper. Slice into 1/2 strips. Slice onion into thin strips.
Heat olive oil in frying pan over medium heat. Add onion strips. Cook and stir for 2 minutes until onion starts to soften and brown. Add peppers and continue to cook and stir for 5 minutes.
Season with salt and pepper. Add chopped fresh thyme and oregano.
