Apple and Roasted Beet Salad Recipe

A flavorful salad of tangy and slightly sweet salad of earthy beets, crisp apple, salad greens, feta cheese and toasted pecans. Dressed with a Raspberry vinaigrette.

  • 4 ounces roasted beets roasted, vinaigrette
  • 2.5 ounces arugula
  • 2.5 ounces spinach baby
  • 8 ounces apple
  • 1/3 cup Feta cheese crumbled
  • 1/3 cup pecans toasted
  • 1/3 cup Raspberry Vinaigrette


  • Chop roasted beets, slice an apple, and rinse salad greens. Place pecans in a frying pan and heat for 5-10 minutes over medium-low heat. Stir occasionally.
  • Place salad greens in a large bowl. Drizzle with approximately 1/4 cup of Raspberry Vinaigrette. Toss to coat.
  • Place approximately 1 heaping cup of dressed salad greens on a plate. Layer with sliced apple, beets, 1-2 teaspoons of Feta cheese, and a sprinkle of pecan pieces.
  • Drizzle with 1 teaspoon of Raspberry Vinaigrette and serve.
