Instructions
Preheat oven to 350°F
Measure whole wheat pastry flour into a 1-cup measure. Shift into a bowl and lightly remeasure flour.
Add whole wheat pastry flour, all-purpose flour, baking soda, spices, and brown sugar into a mixing bowl and combine.
Whisk egg in a bowl. Combine milk and olive oil and whisk into the egg.
Add egg mixture to flour. Mix well. Dough will be stiff. Continue to combine dough with a spoon.
Using a one tablespoon measure. Portion dough into balls and place on a baking sheet lined with parchment paper.
Use a fork or cup coated with sugar to press dough flat.
Bake for 8-9 minutes until the cookie is brown at the edges.
Notes
This recipe makes approximately 3 1/2 dozen cookies. Serving side = 2 cookies.
