Dressing
- 1 lime juice
- 2 tbsp honey
- 1 tbsp white wine vinegar
- 1/4 cup extra virgin olive oil
- 1/4 tsp salt
- 1/8 tsp pepper
Salad
- 4 cups watermelon 1 inch cubes
- 1 cup English cucumber 1/4 inch slices, quartered
- 1/4 red onion thinnly sliced
- 1/4 cup pine nuts toasted
- 1/2 cup feta cheese
Mix olive oil, honey, white wine vinegar, and lime juice. Season with salt, and pepper.
Combine watermelon, cucumber, onion, and 1/2 of the feta cheese
Pour dressing over watermelon mixture and lightly toss.
Place in refrigerator for 1 hour. Serve and sprinkle with remainder of feta cheese and pine nuts.
- This recipe is a great way to take advantage of summer fruit and vegetables.
- Consider adding 1/2 can of black beans to the salad to increase legumes in your diet.
- Best when served the same day.
