Watermelon Salad with Cucumber and Feta Cheese

Flavorful side salad with juicy watermelon, crunchy cucumbers, onions, and feta cheese. A honey lime vinaigrette blends the flavors.

Ingredients

Dressing

  • 1 lime juice
  • 2 tbsp honey
  • 1 tbsp white wine vinegar
  • 1/4 cup extra virgin olive oil
  • 1/4 tsp salt
  • 1/8 tsp pepper

Salad

  • 4 cups watermelon 1 inch cubes
  • 1 cup English cucumber 1/4 inch slices, quartered
  • 1/4 red onion thinnly sliced
  • 1/4 cup pine nuts toasted
  • 1/2 cup feta cheese

Instructions

  • Mix olive oil, honey, white wine vinegar, and lime juice. Season with salt, and pepper.
  • Combine watermelon, cucumber, onion, and 1/2 of the feta cheese
  • Pour dressing over watermelon mixture and lightly toss.
  • Place in refrigerator for 1 hour. Serve and sprinkle with remainder of feta cheese and pine nuts.

Notes

  1. This recipe is a great way to take advantage of summer fruit and vegetables.
  2. Consider adding 1/2 can of black beans to the salad to increase legumes in your diet.
  3. Best when served the same day.
