Ingredients

Couscous

  • 3 cups couscous cooked
  • 1 1/4 cup broth chicken or vegetable
  • 2 tsp olive oil
  • 1/4 tsp onion powder
  • 1/4 tsp garlic powder
  • 1/8 tsp black pepper

Vegetables

  • 1/2 cup celery chopped
  • 1/2 cup english cucumber chopped
  • 1/2 cup carrots chopped
  • 1/2 cup tomatoes chopped
  • 1/2 cup grapes halved
  • 1/4 cup feta cheese crumbled
  • 1/2 cup black olives sliced
  • 1/2 cup green onion chopeed

Dressing

  • 2 tbps olive oil extra virgin
  • 2 tbsp vinegar white wine
  • 1/2 tsp garlic salt
  • 1/2 tsp basil
  • 1/8 tsp nutmeg
  • cayenne pepper

Instructions

Couscous

  • Heat broth, garlic powder, onion powder, 2 teaspoons olive oil, and pepper to a boil.
  • Add couscous and remove from heat. Let stand for 5 minutes and fluff.

Dressing

  • Add all dressing ingredients together and whisk.

Salad

  • Add couscous to a large bowl and drizzle with dressing.
  • Toss in vegetables and serve.
