Cauliflower and Broccoli in Gouda Cheese Sauce

  • 3 cups broccoli chopped
  • 2 cups cauliflower chopped
  • 1/4 cup onion finely chopped
  • 1 tbsp olive oil
  • 1 can cream of chicken soup substitute cream of mushroom or celery
  • 1/3 cup milk 2%
  • 1/2 cup Gouda cheese shredded
  • 1/2 tsp basil dries
  • 1/4 tsp pepper
  • 1/2 cup bread crumbs dried
  • 1 tbsp butter

Instructions

  • Heat oven to 350 degrees.
  • Steam and heat cauliflower and broccoli in a small amount of water in a covered pan for 5-7 minutes. Cook until just fork-tender. Drain and set aside.
  • Saute onion in olive oil.
  • Add milk, Gouda cheese, soup, basil, and pepper. Stir over low heat until cheese melts and forms a sauce.
  • Pour sauce over vegetables and mix until vegetables are coated. Transfer to a 1 1/2 quart baking dish.
  • Melt butter and add to bread crumbs in a small bowl. Mix until butter is incorporated into crumbs.
  • Sprinkle buttered crumbs over vegetable mixture.
  • Heat in oven for 20-25 minutes until golden and bubbly.

Notes

This Gouda cheese sauce is a perfect addition to broccoli, or a mixture of vegetables including carrots, cauliflower, etc.
