Sweet Potato Saute with Apple and Onion

Sweet and spicy side dish of sweet potato apple and onion. Great recipe to use up pantry staples.

  • 2 lg sweet potatoes sliced, 3-4 cups
  • 2 med apples sliced, 2-3 cups
  • 1/2 med onion sliced, 1/2 cup
  • 2 tbsp extra virgin olive oil
  • 1/2 cup orange juice
  • 1/2 cup water
  • 2 tbsp brown sugar
  • 1/4 tsp cardamom
  • 1/8 tsp cayenne pepper
  • 1/2 tsp salt
  • 1/4 lemon

Instructions

  • Place sweet potatoes in microwave and cook on high for 3 minutes. Let cool.
  • Chop apple and sprinkle with lemon juice to prevent browning. Set aside.
  • Peel and slice sweet potato into slices. Set aside.
  • Slice onion thinly. Set aside.
  • Heat olive oil in frying pan and add onions and saute for 2 minutes until they start to brown. Add sweet potatoes and continue to cook over medium heat.
  • Add apple and water. Cover and cook for 3 minutes. Stir.
  • Add orange juice and brown sugar to the pan. Continue heating until sweet potatoes and apples are fork tender.
  • Sprinkle with cardamon, salt and pepper and stir.

Notes

  1. This dish makes a sweet sauce, if you want your dish less sweet then you can try using 1 tablespoon. If you are using a tart apple like a Granny Smith, you may want to include up to a 1/4 cup brown sugar. 
  2. I microwaved the sweet potatoes for this recipe. If you prefer you can peel and boil the sweet potatoes for 15-20 minutes until fork tender.
