Sweet Potato Saute with Apple and Onion
Sweet and spicy side dish of sweet potato apple and onion. Great recipe to use up pantry staples.

- 2 lg sweet potatoes sliced, 3-4 cups
- 2 med apples sliced, 2-3 cups
- 1/2 med onion sliced, 1/2 cup
- 2 tbsp extra virgin olive oil
- 1/2 cup orange juice
- 1/2 cup water
- 2 tbsp brown sugar
- 1/4 tsp cardamom
- 1/8 tsp cayenne pepper
- 1/2 tsp salt
- 1/4 lemon
Place sweet potatoes in microwave and cook on high for 3 minutes. Let cool.
Chop apple and sprinkle with lemon juice to prevent browning. Set aside.
Peel and slice sweet potato into slices. Set aside.
Slice onion thinly. Set aside.
Heat olive oil in frying pan and add onions and saute for 2 minutes until they start to brown. Add sweet potatoes and continue to cook over medium heat.
Add apple and water. Cover and cook for 3 minutes. Stir.
Add orange juice and brown sugar to the pan. Continue heating until sweet potatoes and apples are fork tender.
Sprinkle with cardamon, salt and pepper and stir.
- This dish makes a sweet sauce, if you want your dish less sweet then you can try using 1 tablespoon. If you are using a tart apple like a Granny Smith, you may want to include up to a 1/4 cup brown sugar.
- I microwaved the sweet potatoes for this recipe. If you prefer you can peel and boil the sweet potatoes for 15-20 minutes until fork tender.
