Baked Chicken with Spice Rub

  • 24 ounces chicken breasts
  • 1 lime
  • 2 tbsp EVOO
  • 3 tbsp brown sugar
  • 1/2 tsp dried basil
  • 1/2 tsp oregano
  • 1/2 tsp rosemary
  • 1/2 tsp thyme
  • 1/2 tsp marjoram
  • 1/2 tsp smoked paprika
  • 1/2 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp pepper


  • Preheat oven to 400°F.
  • Line baking pan with aluminum foil
  • Slice one half of lime into thin slices and spread on foil.
  • Lay chicken breasts onto limes.
  • Combine brown sugar and spices to create a rub.
  • Drizzle olive oil over chicken. Rotate chicken in oil to cover.
  • Sprinkle spice rub over all sides of chicken until evenly coated.
  • Squeeze the other half of lime over chicken breasts.
  • Place pan on bottom rack of oven. Bake until the internal temperature of the chicken reaches at least 165°F in the thickest part of the chicken.
  • Remove chicken from oven and cover with foil and let rest for 5-10 minutes.
  • Slice chicken into 1/2 inch slices and serve.
