Sweet Potatoes
- 3 cups sweet potatoes mashed, approximately 3 medium
- 1 cup sugar
- 1/2 cup milk
- 2 lg eggs beaten
- 1/2 cup butter melted
- 1 tsp vanilla
- 1/4 tsp allspice
Pecan Topping
- 1 cup pecans
- 1/3 cup flour
- 1 cup brown sugar
- 1/2 cup butter melted
- 1 tsp cinnamon
Sweet Potatoes
Boil raw sweet potatoes in water until fork tender. Approximately 40 minutes.
Remove potatoes from hot water and set aside to cool.
Lightly wisk eggs and stir into milk and mix well. Add melted butter and vanilla. Mix well.
Peel sweet potatoes and mash.
Add sugar and allspice to mashed sweet potatoes and mix. Combine with the egg and milk mixture. Mix well.
Spray casserole dish with cooking spray.
Add sweet potatoes to casserole dish.
Pecan Topping
Combine flour, cinnamon, brown sugar, and melted butter until it forms a rough crumb. Add pecans and mix well.
Sprinkle pecan topping evenly over top of sweet potatoes.
Add sweet potatoe casserole to bottom rack of oven and bake for 30 minutes.
Serve hot and enjoy!
