Potatoes, carrots, celery, onions, broth, EVOO, Greek yogurt, & pepper. Chop vegetables.
Heat EVOO in bottom of large pan. Cook carrots for 3-5 minutes. Add celery, onion, and potatoes. Stir and cook for 5 minutes.
Add broth. Bring to a boil. Lower heat, cover, and simmer for 20 minutes. Remove from heat. Use emersion blender to pulse & break up vegetables. Stir in Greek yogurt. Season
