  • 48 ounces potatoes 8 medium sized Golden
  • 1 cup broth chicken
  • 1/4 cup olive oil extra virgin
  • 2 tbsp lemon juice medium lemon
  • 1 tsp garlic minced
  • 2 tsp Italian seasoning dried
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • cayenne pinch


  • Preheat oven to 350°F.
  • Wash and peel potatoes.
  • Cut potatoes into quarters.
  • Spray baking dish with non-stick spray.
  • Add potatoes to the baking dish. Make sure potatoes are in a single layer.
  • Whisk broth, lemon juice, spice, salt and pepper in a bowl. Whisk in the olive oil.
  • Pour herb mixture over cut potatoes and mix.
  • Cover pan with foil. Place pan on bottom rack of oven. Cook for 1 hour. Check for doneness with a fork.
