Ingredients

  • 1 cup whole wheat pastry flour
  • 1 1/2 cup all-purpose flour
  • 1 egg large
  • 1 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/2 tsp allspice
  • 1/4 tsp cloves
  • 1/4 tsp ginger
  • 1/3 cup olive oil extra virgin
  • 1/2 cup brown sugar
  • 2 tbsp honey
  • 1/4 cup milk
  • 1/4 cup cane sugar optional for pressing cookie

Instructions

  • Preheat oven to 350°F
  • Measure whole wheat pastry flour into a 1-cup measure. Shift into a bowl and lightly remeasure flour.
  • Add whole wheat pastry flour, all-purpose flour, baking soda, spices, and brown sugar into a mixing bowl and combine.
  • Whisk egg in a bowl. Combine milk and olive oil and whisk into the egg.
  • Add egg mixture to flour. Mix well. Dough will be stiff. Continue to combine dough with a spoon.
  • Using a one tablespoon measure. Portion dough into balls and place on a baking sheet lined with parchment paper.
  • Use a fork or cup coated with sugar to press dough flat.
  • Bake for 8-9 minutes until the cookie is brown at the edges.

Notes

This recipe makes approximately 3 1/2 dozen cookies. Serving side = 2 cookies.
