Spicy Cauliflower Fried Rice Recipe

  • 4 cups cauliflower chopped,one head of cauliflower
  • 2 cups shrimp
  • 1 egg
  • 1/2 cup bean sprouts
  • 3 scallions
  • 1 clove garlic minced
  • 1/4 cup carrot grated
  • 1/2 cup broccoli chopped
  • 2 tablespoons sesame oil
  • 2 tablespoons soy sauce
  • 1 teaspoon fish sauce
  • 1 tablespoon rice vinegar
  • 1/2 teaspoon ginger ground
  • 1/4 teaspoon coriander
  • 1/4 teaspoon pepper
  • salt to taste
  • 1/8 tsp cayenne pepper

Directions

  • Prepare cauliflower rice (see directions below).
  • Whick egg with a fork.
  • Add 1 teaspoon sesame oil to frying pan.
  • Scramble egg. Remove from pan and set aside.
  • Add remainder of sesame oil to frying pan and reheat pan.
  • Add cauliflower rice, shrimp, minced garlic, shredded carrots and chopped broccoli to pan. Season with salt and pepper.
  • Saute for 3-5 minutes. Stir once.
  • Add soy sauce, fish sauce, and rice vinegar.
  • Add ginger, coriander, and cayenne pepper. Stir again.
  • Add bean sprouts, and scallions.

Recipe Tips
Everyone has a different taste pallet. I suggest adding spices based on how you like food to taste. Vary the ingredient amounts based on your personal preference!
Preparing Cauliflower Rice
  1. Pick a large head of cauliflower.
  2. Remove the outside leaves and rinse with water.
  3. Cut the head of cauliflower in half. Cut each half into quarters. Cut out the woody internal stem so you are left with the cauliflower florets.
  4. Chop into 1-2 inch pieces.
  5. Continue to chop or grate the cauliflower into rice-sized pieces or you can process in a food processor. When adding to a food processor, only add 1/3 of the cauliflower at a time. This will help keep the final rice a more consistent size. Pulse cauliflower several times until it is approximately the size of rice.
Time Saver Tip -  grocery stores now sell frozen cauliflower rice. This is a major time saver in preparation and clean up. The size of the frozen cauliflower rice may not be as consistently fine as you can prepare with your food processor, but when you are in a hurry this time saver is worth it.
Cooking Cauliflower Rice
The key to a rice-like texture is removing moisture from the cauliflower. When sauteing, heat your pan with oil and butter added until hot. Add your cauliflower rice and allow to saute. Do NOT cover. Saute for 3-5 minutes before stirring. Less stirring equals a firmer rice. As your cauliflower begins to brown add salt and pepper.
