- 16 ounces beef lean
- 1/2 cup onion finely chopped
- 1/2 cup bell pepper any color, seeded and finely chopped
- 1 tsp garlic minced
- 15 ounces tomatoes with green chilies can mild or medium, petite diced
- 15 ounces tomatoes can, petitie diced
- 15 ounces black beans can, rinsed
- 8 ounces corn can, rinsed
- 2 cups broth beef
Flavorings
- 1/2 tsp salt
- 1 tsp cumin
- 1 tsp chili powder
- 1/8 tsp allspice
- 1 tbsp brown sugar
- parsley garnish, sprinkle
- 1/2 cup Greek Yogurt garnish, 1 tablespoon per serving
Add ground beef to large stock pot. Brown beef over medium heat for 5 minutes until no longer pink.
Add chopped onion and bell pepper. Saute for 3-5 minutes.
Add minced garlic. Stir.
Add cans of tomatoes, black beans (rinsed), and corn. Stir and cook.
Add 2 cups of broth. Stir
Add remaining ingredients (salt, cumin, chili powder, allspice, and brown sugar. Stir.
Bring stockpot to a boil. Lower heat and simmer for 30 minutes or until vegetables are tender and chili is heated through.
