Corn Black Bean and Beef Chili Recipe

Equipment

Ingredients

  • 16 ounces beef lean
  • 1/2 cup onion finely chopped
  • 1/2 cup bell pepper any color, seeded and finely chopped
  • 1 tsp garlic minced
  • 15 ounces tomatoes with green chilies can mild or medium, petite diced
  • 15 ounces tomatoes can, petitie diced
  • 15 ounces black beans can, rinsed
  • 8 ounces corn can, rinsed
  • 2 cups broth beef

Flavorings

  • 1/2 tsp salt
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/8 tsp allspice
  • 1 tbsp brown sugar
  • parsley garnish, sprinkle
  • 1/2 cup Greek Yogurt garnish, 1 tablespoon per serving

Instructions

  • Add ground beef to large stock pot. Brown beef over medium heat for 5 minutes until no longer pink.
  • Add chopped onion and bell pepper. Saute for 3-5 minutes.
  • Add minced garlic. Stir.
  • Add cans of tomatoes, black beans (rinsed), and corn. Stir and cook.
  • Add 2 cups of broth. Stir
  • Add remaining ingredients (salt, cumin, chili powder, allspice, and brown sugar. Stir.
  • Bring stockpot to a boil. Lower heat and simmer for 30 minutes or until vegetables are tender and chili is heated through.

Notes

1 Serving = 1 1/2 cups.
