- 24 ounces chicken breasts roughly 3 breast
- 15 ounces tomatoes petite diced
- 1 cup onion thinnly sliced
- 1/2 cup balsamic vinegar
- 2 tbsp olive oil
- 11/2 tsp Italian spice mix
- 1 tsp garlic salt
- 1/2 tsp pepper
- 1/4 tsp paprika
- 1 cup spinach fresh
Cut chicken breasts in half into equal portions. Sprinkle chicken with garlic salt and pepper.
Heat olive oil in a frying pan. Add onion and cook for 3 minutes.
Add chicken breasts. Saute for 5 minutes over medium low heat. Turn and cook for an additional five minutes.
Add tomatoes, balsamic vinegar, Italian spice mix, and paprika. Simmer for 10 minutes over low heat.
Add spinach to sauce during last 5 minutes and cook until wilted.
The chicken is done when the internal temperature reaches 165 degrees F with a temperature probe.
