Healthy Cheese Ball Appetizer

Packed full of spicy cheese flavor, this low-fat cheese ball is a healthier alternative.

Ingredients

  • 8 ounces neufchatel cheese low-fat cream cheese
  • 8 ounces low fat cheddar cheese
  • 1 tbsp Greek yogurt zero fat
  • 1 tbsp jalepeno peppers chopped
  • 2 tbsp olive juice
  • 1 tsp onion grated
  • 1/2 cup pecans chopped

Instructions

  • Allow Neufchatel and cheddar cheese to come to room temperature.
  • Place pecans in a frying pan. Heat over medium low heat until pecans are lightly toasted. Stir constantly to prevent burning. Set aside and let cool.
  • Add toasted-pecans to a food processor or chopper. Lightly pulse until roughly chopped.
  • Add all ingredients, except pecans, to a large mixing bowl
  • Using a hand mixer, blend ingredients until it is a uniform consistency.
  • Scoop cheese mixture onto non-stick wrap. Form into a ball and wrap to seal.
  • Refridgerate for a minimum of one hour.
  • When ready to serve. Roll cheese ball in chopped pecans.
  • Serve with whole wheat crackers.
