- 16 ounces black eyed peas rinsed
- 8 ounces corn rinsed
- 1/3 cup bell pepper finely chopped
- 1/4 cup red onion finely chopped
- 1 tbsp jalepeno pepper finely chopped
- 1 tsp garlic minced
Dressing
- 1/3 cup olive oil extra virgin
- 1/4 cup vinegar white wine
- 1/2 tsp salt
- 1/8 tsp pepper
Dip Ingredients
Chop onion, bell pepper, and jalepeno pepper. Add to large storage bowl.
Add remaining ingredient and combine with dressing.
Cover and refridgerate for at least 4 hours. Best flavor overnight.
Add to serving dish and serve with chips or as a relish for meat.
