Ingredients

  • 16 ounces black eyed peas rinsed
  • 8 ounces corn rinsed
  • 1/3 cup bell pepper finely chopped
  • 1/4 cup red onion finely chopped
  • 1 tbsp jalepeno pepper finely chopped
  • 1 tsp garlic minced

Dressing

  • 1/3 cup olive oil extra virgin
  • 1/4 cup vinegar white wine
  • 1/2 tsp salt
  • 1/8 tsp pepper

Instructions

Dressing

  • Mix olive oil and vinegar. Whisk until oil and vinegar until combined.
  • Add salt and pepper and whisk.

Dip Ingredients

  • Chop onion, bell pepper, and jalepeno pepper. Add to large storage bowl.
  • Add remaining ingredient and combine with dressing.
  • Cover and refridgerate for at least 4 hours. Best flavor overnight.
  • Add to serving dish and serve with chips or as a relish for meat.
