Easy Sweet Potato Casserole with Pecans

Ingredients

Sweet Potatoes

  • 3 cups sweet potatoes mashed, approximately 3 medium
  • 1 cup sugar
  • 1/2 cup milk
  • 2 lg eggs beaten
  • 1/2 cup butter melted
  • 1 tsp vanilla
  • 1/4 tsp allspice

Pecan Topping

  • 1 cup pecans
  • 1/3 cup flour
  • 1 cup brown sugar
  • 1/2 cup butter melted
  • 1 tsp cinnamon

Instructions

  • Preheat oven to 375°F.

Sweet Potatoes

  • Boil raw sweet potatoes in water until fork tender. Approximately 40 minutes.
  • Remove potatoes from hot water and set aside to cool.
  • Lightly wisk eggs and stir into milk and mix well. Add melted butter and vanilla. Mix well.
  • Peel sweet potatoes and mash.
  • Add sugar and allspice to mashed sweet potatoes and mix. Combine with the egg and milk mixture. Mix well.
  • Spray casserole dish with cooking spray.
  • Add sweet potatoes to casserole dish.

Pecan Topping

  • Combine flour, cinnamon, brown sugar, and melted butter until it forms a rough crumb. Add pecans and mix well.
  • Sprinkle pecan topping evenly over top of sweet potatoes.
  • Add sweet potatoe casserole to bottom rack of oven and bake for 30 minutes.
  • Serve hot and enjoy!
