White Bean Chicken Sausage and Kale Soup

Equipment

Ingredients

  • 2 tbsp olive oil
  • 4 whole carrots sliced
  • 4 ribs celery chopped
  • 1/3 cup onion finely chopped
  • 1 tbsp garlic minced
  • 2 cups kale 2-3 kale leaves, stalk removed
  • 1 can white beans cannellini or white, rinsed
  • 8 cups broth chicken or vegetable
  • 10 oz chicken sausage 4 links, nitrate-free, sliced
  • 1 tbsp parsley
  • 1 tsp Italian spices
  • 1/4 tsp pepper
  • salt to taste

Instructions

  • Chop carrots, celery, onion, kale, and mince garlic. Set aside
  • Heat olive oil in stockpot over medium heat.
  • Add carrots and saute for 3 minutes. Then add onion and celery and saute for 3 minutes.
  • Add garlic. Stir so garlic does not burn.
  • Add broth to stockpot.
  • Remove 1 cup of broth and add to a medium bowl and set aside.
  • Bring ingredients in stockpot to a boil over medium heat.
  • Add kale and sliced sausage and remaining spices to stockpot.
  • Rinse beans. Add 1/3 can of beans ro reserved broth and pulse with an immersion blender. Add processed beans and remaining can of beans to stockpot.
  • Lower heat to low. Simmer for 20 minutes until vegetables are tender and kale is soft.

Notes

This recipe makes approximately 6 servings of 1 1/2 to 2 cups each.
