Ingredients

olive oil

carrots
sliced

celery
chopped

onion
finely chopped

garlic
minced

kale
2-3 kale leaves, stalk removed

can
white beans
cannellini or white, rinsed
8
cups
broth
chicken or vegetable
10
oz
chicken sausage
4 links, nitrate-free, sliced
1
tbsp
parsley
1
tsp
Italian spices
1/4
tsp
pepper
salt to taste
Instructions
Chop carrots, celery, onion, kale, and mince garlic. Set aside
Heat olive oil in stockpot over medium heat.
Add carrots and saute for 3 minutes. Then add onion and celery and saute for 3 minutes.
Add garlic. Stir so garlic does not burn.
Add broth to stockpot.
Remove 1 cup of broth and add to a medium bowl and set aside.
Bring ingredients in stockpot to a boil over medium heat.
Add kale and sliced sausage and remaining spices to stockpot.
Rinse beans. Add 1/3 can of beans ro reserved broth and pulse with an immersion blender. Add processed beans and remaining can of beans to stockpot.
Lower heat to low. Simmer for 20 minutes until vegetables are tender and kale is soft.
Notes
This recipe makes approximately 6 servings of 1 1/2 to 2 cups each.
