Light and Fluffy Healthy Pancakes

Healthy pancakes made with whole wheat pastry flour are light and fluffy.

Ingredients

  • 2 cups whole wheat pastry flour
  • 1 tbsp brown sugar may substitute 2 tsps honey
  • 1/2 tsp salt
  • 1 tbsp baking powder
  • 1 egg
  • 1 tsp vanilla
  • 1 tbsp olive oil
  • 1 cup almond milk
  • 1 tbsp olive oil for frying pan

Instructions

  • Add whole wheat pastry flour, brown sugar, and baking powder. to mixing bowl and combine.
  • Mix egg, brown sugar, milk, vanilla and 1 tablespoon olive oil.
  • Add egg mixture flour.
  • Let batter sit for 5 minutes.
  • Heat 1 tablespoon olive oil in frying pan over medium heat.
  • Add 1/4 cup batter to frying pan. Repeat for 3-4 pancakes.
  • Cook until bubbles form in the batter.
  • Flip pancake over in pan. Continue cooking until the pancake springs back when lightly touched with a finger.
  • Serve with cooked fruit ot pure maple syrup.

Notes

Substitute 2 teaspoons of honey for brown sugar. Replace brown sugar with honey in step 2.  
Fruit Sauce: Cut up fruit and sprinkle with lemon juice. Add to pan. Add 2-3 tablespoons pure maple syrup, 3 tablespoons water, and 1/4 tsp vanilla. Heat over low heat for 10-15 minutes. Sprinkle with cinnamon. Recipe calories do not include fruit sauce.
