Light and Fluffy Healthy Pancakes

- 2 cups whole wheat pastry flour
- 1 tbsp brown sugar
- 1/2 tsp salt
- 1 tbsp baking powder
- 1 egg
- 1 tsp vanilla
- 1 tbsp olive oil for frying pan
- 1 cup almond milk
- 1 tbsp olive oil
Add whole wheat pastry flour, salt, and baking powder. to mixing bowl and combine.
Mix egg, sugar, milk. vanilla and 1 tablespoon olive oil.
Add egg mixture flour.
Let batter sit for 5 minutes.
Heat 1 tablespoon olive oil in frying pan over medium heat.
Add 1/4 cup batter to frying pan. Repeat for 3-4 pancakes.
Cook until bubbles form in the batter.
Flip pancake over in pan. Continue cooking until the pancake springs back when lightly touched with a finger.
Serve with cooked fruit ot syrup.
Substitute honey for brown sugar.
Fruit Sauce: Cut up fruit and sprinkle with lemon juice. Add to pan. Add 2 tablespoons brown sugar, 3 tablespoons water, 1/4 tsp vanilla. Heat over low heat for 10-15 minutes. Sprinkle with cinnamon.
