Mediterranean Flavored Turkey and Brown Rice Stuffed Peppers
Tender Turkey and Brown Rice Stuffed Peppers. Flavored with Mediterranean spices, feta cheese, and tomatoes. Served with a spicy Greek yogurt sauce.

- 6 bell peppers halved
- 16 ounces turkey ground
- 1/2 cup onion finely chopped
- 1 tbsp olive oil
- 2 cups brown rice cooked
- 8 oz tomato sauce split
- 15 ounces tomatoes chopped, undrained
- 1 tsp Italian spices
- 1 tsp cumin
- 1/2 tsp paprika smoked
- 1/2 tsp cinnamon
- 1 tbsp parsley
- 1/2 tsp pepper
- 1/4 tsp salt
- 1/2 cup feta cheese crumbled
Greek Yogurt Sauce
- 1/2 cup Greek yogurt
- 2 tbsp tomato sauce
- 1/8 tsp garlic powder
- 1/4 tsp coriander
- 1/8 tsp ground caroway seeds
- pinch cayenne pepper
Heat oven to 375°F. Spray dish with olive oil cooking spray.
Add 2 cups of water or chicken broth to a pan and bring to a boil. Add rice bring to a boil, lower temperature and cover and simmer according to package directions.
Chop onions. Set aside.
Wash and cut peppers in half through stem. Clean out seeds and inside of peppers. Set aside.
Add olive oil to a frying pan and heat until hot. Add ground turkey. Cook 3-4 minutes until browned. Turn turkey and cook and stir for 3-4 minutes until brown.
Sprinkle turkey with spices, salt, and pepper.
Stir in onion and cook for 2-3 minutes.
Add rice, drained chopped tomatoes, and tomato sauce. Mix well. Add in feta cheese and stir lightly.
Spoon turkey and rice mixture to peppers. Filling until slightly mounded.
Place peppers in baking dish. Add 1/2 cup of water to bottom of pan. Cover pan with lid or foil. Place pan in oven and bake for 60 minutes.
Sprinkle peppers with a tsp of feta cheese and chopped green onions to serve. Drizzle with yogurt sauce.
Greek Yogurt Sauce
Mix yogurt and tomato sauce together. Stir in garlic powder, coriander, ground caraway seeds, and pinch of cayenne pepper. Let set to allow flavors to meld.
