Mediterranean Salad with Chickpeas & Barley

- 1 cup barley
- 1 can chickpeas
- 1/2 English cucumber
- 1/2 lg tomato
- 1/4 cup feta cheese
- 2 cups vegetable broth
- 1 clove garlic minced
- 1/2 tsp paprika smoked
- 1/4 tsp corriander
- 1/4 tsp cumin
- 1 lemon juiced
- 1/4 cup extra virgin olive oil
Cook barley in broth with garlic, paprika, coriander, and cumin for 10 minutes. Set aside and cool.
Rinse and drain chickpeas.
Whisk olive oil and lemon juice.
Chop cucumber into bite-sized quarters.
Chop tomato into 1/4 inch pieces
Mix all ingredients together. Sprinkle with feta cheese
Chill in refrigerator.
Most of the Mediterranean flavor is in the spices that the barley is cooked in. The lemon and olive oil helps meld the flavors.
You can add other vegetables and sprinkle nuts for more flavor.
When trying to lose weight, watch your serving size. Generally, 1/2 cup serving as a side dish will allow you to include whole grains and protein in your diet.
