Apple Spice Cookie with Pecans

Dry Ingredients
- 3/4 Cups whole wheat pastry flour
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/4 tsp cloves
- 1/4 tsp nutmeg
Wet Ingredients
- 1 lg egg
- 1/4 cup milk
- 1/3 cup olive oil
- 1/2 cup brown sugar
- 1/2 cup sugar
- 1 tsp vanilla
Additions
- 1 cup apple chopped
- 1 cup chopped pecans
Preheat oven to 375 degrees.
Mix the first 7dry ingredients together in a bowl.
In a second bowl, whisk egg with a fork. Add milk, vanilla, olive oil and mix.
Add sugars to egg mixture. Mix until well combined.
Add egg mixture to dry ingredients. Combine well.
Add chopped apple and pecans, and raisins to the dough.
Drop 2 inch spoonfuls onto parchment lined baking sheet. Leave space between cookies.
Bake for 10-12 minutes for a soft cake-like cookie.
Remove from oven and cool on a rack. Store with a single layer between parchment in a sealed containe in refrigerator. Freeze in airtight container up to 3 months.
This is a moist, cake-like cookie.
