Ingredients

Apple Filling

  • 2 apples chopped
  • 1/2 tsp cinnamon
  • 1/2 cup walnuts chopped
  • 2 tbsp brown sugar
  • 1/4 tsp nutmeg

Muffin

  • 3/4 cup olive oil
  • 3/4 cup sugar
  • 3/4 cup brown sugar
  • 2 large eggs
  • 1 3/4 cup whole wheat flour white
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 cup greek yogurt low fat
  • 2 tsp vanilla

Streusel Topping

  • 1/4 cup oats old fashioned
  • 2 tbsp whole wheat flour white
  • 1/4 cup brown sugar
  • 2 tbsp olive oil
  • pinch salt

Instructions

Apple Filling

  • Mix filling ingredients and set aside.

Muffin

  • Preheat oven to 350 degrees.
  • Mix olive oil, sugar, brown sugar, and eggs together.
  • Combine flour, baking powder, and salt.
  • Add flour mixture, alternating with greek yogurt. Beat well after each addition.
  • Add vanilla.
  • Add muffin cup liners to muffin tin.
  • Add 1/4 cup of muffin mix to each liner.
  • Add 1/4 cup of apple filling each liner.
  • Fill muffin liner to 3/4 full.

Streusel Topping

  • Mix streusel ingredients together until crumbly.
  • Add 1 tablespoon of streusel topping to each muffin.
  • Bake muffins for 25 minutes until centers are set and tooth pick comes out clean.
