Cheesy Mashed Cauliflower

Ingredients

  • 1 head cauliflower riced
  • 2 oz cream cheese
  • 1/4 cup parmesan cheese
  • 2 oz sour cream
  • 2 T butter
  • 2 T heavy whipping cream
  • 1/2 cup cheddar cheese shredded
  • 1/2 tsp  garlic powder
  • 1/2 tsp salt to taste
  • 1/4 tsp pepper

Instructions

  • Prepare cauliflower rice and boil until soft.
  • Strain and let cool.
  • Put cooked cauliflower in a cloth and squeeze excess water. This is an important step.
  • Add cauliflower to a food processor and pulse.
  • Add next 7 ingredients and blend until a creamy consistency.
  • Add salt and pepper to taste.
  • Add cauliflower mash to a small baking dish.
  • Bake at 350 degrees for 20 minutes until heated through and starting to brown.

Recipe Tips

Preparing Cauliflower Rice

  1. Pick a large head of cauliflower.
  2. Remove the outside leaves and rinse with water.
  3. Cut the head of cauliflower into quarters. Cut out the woody internal stem so you are left with the cauliflower florets.
  4. Chop into 1/2 inch pieces.
  5. Add to food processor and chop until the size of a grain of rice.
  6. Alternatively, continue to chop cauliflower until is the size of a grain of rice.
