Healthy Apple and Cranberry Stuffing

Ingredients

  • 8 ounces whole wheat bread croutons
  • 1 cup apple chopped, approximately 1 medium
  • 1/2 cup cranberries fresh
  • 1/2 cup onion finely chopped
  • 1/2 cup celery sliced, 1/8-1/4 inch slices
  • 1 tablespoon brown sugar
  • 1/4 teaspoon sage dry
  • 1 large egg should measure 1/4 cup, add water
  • 1/2 cup orange juice
  • 1/2 cup broth chicken
  • 1 tablespoon butter
  • 2 tablespoon olive oil extra virgin

Instructions

  • Preheat oven to 325°F. Chop apple, celery, and onion. Set aside. Spray baking dish set aside.
  • Heat butter and olive oil over medium heat in a frying pan. Add apple, celery, and onion. Stir and cook for 3-5 minutes. Add cranberries. Stir and cook for an additional 3-5 minutes until vegetables are tender. Remove from heat.
  • Lightly crush croutons and place them in a large bowl. Set aside.
  • Whisk egg in a bowl. Whisk in chicken broth and orange juice. Add brown sugar, sage, and salt. Pour over croutons. Mix well. Add in cranberry-apple mixture. Lightly mix to incorporate into croutons.
  • Add crouton mixture to the prepared baking dish. Cover with aluminum foil. Bake for 30 minutes. Remove foil. Bake for an additional 10 minutes.
