Healthy Apple and Cranberry Stuffing Recipe

- 8 ounces whole wheat bread croutons
- 1 cup apple chopped, approximately 1 medium
- 1/2 cup cranberries fresh
- 1/2 cup onion finely chopped
- 1/2 cup celery sliced, 1/8-1/4 inch slices
- 1 tablespoon brown sugar
- 1/4 teaspoon sage dry
- 1 large egg should measure 1/4 cup, add water
- 1/2 cup orange juice
- 1/2 cup broth chicken, up to 2/3 cup
- 1 tablespoon butter optional
- 2 tablespoon olive oil extra virgin
Preheat oven to 325°F. Chop apple, celery, and onion. Set aside. Spray baking dish set aside.
Heat butter and olive oil over medium heat in a frying pan. Add apple, celery, and onion. Stir and cook for 3-5 minutes. Add cranberries. Stir and cook for an additional 3-5 minutes until vegetables are tender. Remove from heat.
Lightly crush croutons and place them in a large bowl. Set aside.
Whisk egg in a bowl. Whisk in chicken broth and orange juice. Add brown sugar, sage, and salt. Pour over croutons. Mix well. Add in cranberry-apple mixture. Lightly mix to incorporate into croutons.
Add crouton mixture to the prepared baking dish. Cover with aluminum foil. Bake for 30 minutes. Remove foil. Bake for an additional 10 minutes.
