Oven Baked Chicken Recipe with Potatoes and Peppers
One dish chicken recipe with creamy golden potatoes, bell peppers, lemon, and spices.
- 24 ounces chicken breasts
- 21 ounces golden potatoes small, cut into 1-inch cubes
- 1 cup green pepper cut into 1-inch squares
- 1 cup red pepper cut into 1/4-inch strips
- 1/2 cup black olives sliced
- 1 lg lemon sliced
- 1/2 cup broth chicken
- 4 tbsp olive oil extra virgin
- 1 tbsp basil fresh, chopped
- 1/2 tsp paprika smoked
- 1/2 tsp black pepper
- 1/4 tsp salt
- cayenne pepper pinch
Preheat oven to 400°F.
Clean chicken and cut into 4 ounce portions.
Cut potatoes into 1-1 1/2 inch cubes.
Cut green pepper into 1-inch cubes.
Slice red pepper into 1/4-inch slices.
Slice black olives.
Spray bottom of baking dish with cooking spray.
Mix black pepper, cayenne, salt and paprika.
Add potatoes in a single layer to the bottom of the baking pan. Drizzle with olive oil. Sprinkle half spices on potatoes.
Add chicken pieces. Sprinkle chicken with remaining spices.
Add bell peppers and black olives.
Add sprinkle of fresh basil. Drizzle remaining olive oil over vegetables and chicken.
Add broth to pan.
Place baking dish on bottom rack of oven and bake for 45 minutes. Check with a temperature probe. Chicken is done at 160-165°F.
