Ingredients

  • 24 ounces chicken breasts
  • 21 ounces golden potatoes small, cut into 1-inch cubes
  • 1 cup green pepper cut into 1-inch squares
  • 1 cup red pepper cut into 1/4-inch strips
  • 1/2 cup black olives sliced
  • 1 lg lemon sliced
  • 1/2 cup broth chicken
  • 4 tbsp olive oil extra virgin
  • 1 tbsp basil fresh, chopped
  • 1/2 tsp paprika smoked
  • 1/2 tsp black pepper
  • 1/4 tsp salt
  • cayenne pepper pinch

Instructions

  • Preheat oven to 400°F.
  • Clean chicken and cut into 4 ounce portions.
  • Cut potatoes into 1-1 1/2 inch cubes.
  • Cut green pepper into 1-inch cubes.
  • Slice red pepper into 1/4-inch slices.
  • Slice black olives.
  • Spray bottom of baking dish with cooking spray.
  • Mix black pepper, cayenne, salt and paprika.
  • Add potatoes in a single layer to the bottom of the baking pan. Drizzle with olive oil. Sprinkle half spices on potatoes.
  • Add chicken pieces. Sprinkle chicken with remaining spices.
  • Add bell peppers and black olives.
  • Add sprinkle of fresh basil. Drizzle remaining olive oil over vegetables and chicken.
  • Add broth to pan.
  • Place baking dish on bottom rack of oven and bake for 45 minutes. Check with a temperature probe. Chicken is done at 160-165°F.
