- 48 ounces potatoes 8 medium sized Golden
- 1 cup broth chicken
- 1/4 cup olive oil extra virgin
- 2 tbsp lemon juice medium lemon
- 1 tsp garlic minced
- 2 tsp Italian seasoning dried
- 1/4 tsp salt
- 1/8 tsp pepper
- cayenne pinch
Preheat oven to 350°F.
Wash and peel potatoes.
Cut potatoes into quarters.
Spray baking dish with non-stick spray.
Add potatoes to the baking dish. Make sure potatoes are in a single layer.
Whisk broth, lemon juice, spice, salt and pepper in a bowl. Whisk in the olive oil.
Pour herb mixture over cut potatoes and mix.
Cover pan with foil. Place pan on bottom rack of oven. Cook for 1 hour. Check for doneness with a fork.
