- 1 tbsp olive oil extra virgin
- 8.8 ounces brown rice Uncle Ben's Ready Rice
- 1/8 tsp cinnamon
- 1/2 cup apple juice unsweetened
- 1/2 cup celery chopped
- 1 cup apple chopped
- 2 tbsp golden raisins
- 1/4 cup pecans chopped
Chop apple and celery.
Sprinkle apple with lemon juice. Toss to coat.
Add rice and saute over medium low heat to lightly brown. Stir and cook for 3 minutes.
Add apple juice to frying pan. Stir until absorbed.
Add olive oil, celery, and pecans. Stir and cook for 3 minutes.
Add apple and stir.
Serve warm or chilled.
