  • 1 tbsp olive oil extra virgin
  • 8.8 ounces brown rice Uncle Ben's Ready Rice
  • 1/8 tsp cinnamon
  • 1/2 cup apple juice unsweetened
  • 1/2 cup celery chopped
  • 1 cup apple chopped
  • 2 tbsp golden raisins
  • 1/4 cup pecans chopped

Instructions

  • Chop apple and celery.
  • Sprinkle apple with lemon juice. Toss to coat.
  • Add rice and saute over medium low heat to lightly brown. Stir and cook for 3 minutes.
  • Add apple juice to frying pan. Stir until absorbed.
  • Add olive oil, celery, and pecans. Stir and cook for 3 minutes.
  • Add apple and stir.
  • Serve warm or chilled.
