  • 14 ounces black-eyed peas can, rinsed
  • 1 tbsp olive oil extra virgin
  • 1/2 cup onion finely chopped
  • 1/2 cup bell pepper finely chopped
  • 1/2 cup celery finely chopped
  • 1 tsp garlic minced
  • 14 ounces tomatoes petitie diced drained,
  • 1/4 cup broth chicken, beef, or vegetable
  • 1/4 tsp thyme dried
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp hot sauce
  • 1/8 tsp cayenne pepper
  • 1/8 tsp allspice
  • 1 bay leaf

Instructions

  • Chop onion, celery and bell pepper. Drain and rinse black-eyed peas.
  • Heat olive oil in a pan on medium heat.
  • Add chopped vegetables and cook for 3 minutes,
  • Add garlic and continue to stir for 2 minutes.
  • Add black-eyed peas, drained tomatoes, broth, hot sauce, and spices.
  • Adjust heat to low and cook 10 minutes until heated through.

Notes

Serving size = 3/4 cup.
