- 14 ounces black-eyed peas can, rinsed
- 1 tbsp olive oil extra virgin
- 1/2 cup onion finely chopped
- 1/2 cup bell pepper finely chopped
- 1/2 cup celery finely chopped
- 1 tsp garlic minced
- 14 ounces tomatoes petitie diced drained,
- 1/4 cup broth chicken, beef, or vegetable
- 1/4 tsp thyme dried
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/4 tsp hot sauce
- 1/8 tsp cayenne pepper
- 1/8 tsp allspice
- 1 bay leaf
Chop onion, celery and bell pepper. Drain and rinse black-eyed peas.
Heat olive oil in a pan on medium heat.
Add chopped vegetables and cook for 3 minutes,
Add garlic and continue to stir for 2 minutes.
Add black-eyed peas, drained tomatoes, broth, hot sauce, and spices.
Adjust heat to low and cook 10 minutes until heated through.
