Healthier Ambrosia Salad

Light and full of citrus flavor, this Ambrosia recipe is filled with fruit, coconut, and a light yogurt and whipped topping dressing.

Equipment

Ingredients

  • 1 1/2 cups pineapple fresh, chopped
  • 1 can mandarin oranges in light syrup
  • 1 cup green grape halves
  • 1 cup apple chopped
  • 2 tbsp coconut shredded
  • 2 tsp lemon juice

Dressing

  • 2 tbsp Greek yogurt fat free
  • 2 tbsp avocado mayonnaise
  • 1/4 cup whipped topping fat free
  • 1 tbsp orange juice unsweetened
  • 1/8 tsp salt

Instructions

  • Chop pineapple and place in colinder to drain with mandarin oranges.
  • Wash and chop an apple and grapes. Sprinkle lemon juice on apple to prevent browning. Set aside.

Dressing

  • Combine Greek yogurt, mayonnaise, and cool whip in a glass bowl.
  • Stir in orange juice and salt.
  • Add pineapple, mandarin oranges, apple, grapes, and coconut to the dressing. Gently toss to coat with dressing.
  • Cover and refridgerate for at least one hour.
