Ingredients

  • 1 cup celery 2 staulk, chopped
  • 1 cup carrots 2 medium, chopped
  • 1/3 cup onion finely chopped
  • 2 tbsp olive oil
  • 3 cups broth chicken
  • 1 cup ham chopped or ham bone
  • 30 ounce cannellini beans 2 cans, drained
  • 1 bay leaf
  • 3/4 tsp thyme
  • 1/2 tsp pepper

Instructions

  • Heat olive oil in stock pot.
  • Add chopped carrots. Saute for 3-5 minutes.
  • Add chopped celery. Saute for 3 minutes.
  • Add onion. Saute for 3 minutes.
  • Add broth, bay leaf, thyme, pepper, and ham hock to the pan.
  • Heat over medium low heat for 10 minutes.
  • Add drained and rinsed beans to the pan. Heat through for 10 minutes.
