- 1 cup celery 2 staulk, chopped
- 1 cup carrots 2 medium, chopped
- 1/3 cup onion finely chopped
- 2 tbsp olive oil
- 3 cups broth chicken
- 1 cup ham chopped or ham bone
- 30 ounce cannellini beans 2 cans, drained
- 1 bay leaf
- 3/4 tsp thyme
- 1/2 tsp pepper
Heat olive oil in stock pot.
Add chopped carrots. Saute for 3-5 minutes.
Add chopped celery. Saute for 3 minutes.
Add onion. Saute for 3 minutes.
Add broth, bay leaf, thyme, pepper, and ham hock to the pan.
Heat over medium low heat for 10 minutes.
Add drained and rinsed beans to the pan. Heat through for 10 minutes.
