Healthy Baked Mediterranean Meatballs

Mediterranean Flavored Meatballs are tender and flavorful. Baked rather than fried, they are a healthy appetizer, soup ingredient, or pasta topping.

Ingredients

  • 2 lb ground turkey
  • 2 lg eggs
  • 1/2 cup almond milk unsweetened
  • 2 tbsp olive oil extra virgin
  • 1/2 cup bread crumb
  • 1/3 cup Parmesan cheese grated
  • 1 tsp onion powder
  • 1 tsp Italian spices
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1 tsp cinnamon
  • 1 tbsp parsley
  • 1/2 tsp salt
  • 1/2 tsp pepper

Instructions

  • Preheat oven to 400°F.
  • Place ground turkey in a large mixing bowl.
  • Whisk egg, milk, and oil together. Mix in bread crumbs. Add to turkey,
  • Combine grated Parmesan cheese, spices, salt, and pepper. Sprinkle over turkey.
  • Use hands or a pastry blender to mix ingredients and throughly combine.
  • Use a round tablespoon measuring spoon to scoop and form round meatball.
  • Cover baking sheet with parchment paper.
  • Space so meatballs are not touching on parchment paper.
  • Bake on lower rack of oven for 10 to 15 minutes until the internal temperature of the meatball is 165°F.
