- 24 ounces salmon thawed if frozen
- 2 tbsp olive oil extra virgin
- 1 lemon sliced
Spice Rub
- 1/4 tsp paprika
- 1/2 tsp allspice
- 1/4 tsp cardamon
- 1/4 tsp coriander
- 1 tbsp brown sugar
- 1/8 tsp salt
- 1/8 tsp pepper
Preheat oven to 350°F. Combine all spices and mix well.
Place large piece of foil in a pan. Include enough to form a sealed pocket. Slice lemon and layer on the foil. Place salmon on lemon slices, skin side down.
Drizzle with olive oil and rub over entire surface. Sprinkle spice rub onto salmon and rub over entire surface.
Fold foil over salmon and crimp to seal. Place baking dish on bottom rack of oven.
Bake for 25-30 minutes until a meat thermometer registers 145°F in thickest part of Salmon. If your filet is thin, start checking the internal temperature at 20 minutes.
