Ingredients

Dry Ingredients

  • 1 cups whole wheat pastry flour
  • 1 1/4 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp ginger
  • 1/4 tsp cloves

Wet Ingredients

  • 2 lg eggs
  • 2/3 cup olive oil
  • 1 cup brown sugar
  • 1/2 cup sugar
  • 2 tsp vanilla
  • 2 cups zucchini

Instructions

  • Heat oven to 350°F.
  • Spray a loaf pan with cooking spray and set aside.
  • Grate a medium zucchini with a hand grater. Set aside.
  • Whisk eggs and add oil. Whisk until well blended.
  • Add sugar and brown sugar to the egg mixture. Mix well.
  • Add vanilla and zucchini to mixing bowl. Mix and set aside.
  • Combine all dry ingredinets and stir with a whisk to combine.
  • Add zucchini mixture to flour. Mix well with a spatula.
  • Let batter rest for 10 minutes.
  • Pour batter in loaf pan.
  • Bake in preheated oven for 45 minutes. Bake until toothpick inserted in center of loaf comes out clean. Sides of the bread will also start to pull away from pan.
  • Cool on a wire rack. Cut and serve.
  • Wrap bread in plastic wrap and then in foil.
