Streusel Topped Apricot Oat Muffins

Streusel-Topped apricot oat muffins are made with whole wheat pastry flour, olive oil, and greek yogurt for a moist and tender muffin.

Wet Ingredients

  • 2 lg eggs
  • 1/2 cup milk coconut, almond, etc
  • 1/2 cup greek yogurt low fat
  • 1/4 cup olive oil extra virgin
  • 1 tsp vanilla
  • 1/2 cup brown sugar

Additions

  • 1/2 cup oats old fashioned
  • 1/2 cup apricots dried, chopped, divided

Streusel-Topping

  • 2 tbsp whole wheat pastry flour
  • 1/3 cup brown sugar
  • 1/4 cup oats old fashioned
  • 1/2 tsp cinnamon
  • 1/4 cup pecans chopped
  • 2 tbsp olive oil
  • pinch of salt

Instructions

  • Heat oven to 350°F.
  • Place paper muffin liners in muffin tin. Spray each liner with cooking spray.
  • Add all-purpose and whole wheat pastry flour, baking powder to a mixing bowl. Mix until well combined.
  • Whisk eggs and milk. Add olive oil, Greek yogurt, and vanilla to dry ingredients. Mix on low speed. Stop and scrape sides of the bowl. Continue mixing until just combined.
  • Fold in oats.
  • Add a small amount of batter to each muffin tin.
  • Divide an add approximately 1/2 of the apricots to the muffins.
  • Fill each muffin liner 3/4 full. Sprinkle the remainder of chopped apricots on muffin batter.
  • Add 1 tablespoon of streusel mix to the top of each muffin.
  • Bake for 15 minutes until a toothpick comes out clean from the center of a muffin.

Notes

A couple of adjustments to this recipe:
  1. Spray liners with cooking spray. Bottom and sides. This helps with batter sticking. I use an olive oil spray. 
  2. Add half the apricots to the batter, add batter to muffin liners. Sprinkle remaining chopped apricots on top.
